What Do You Do When You Have Kohlrabi Coming Out Of Your Ears?

We've been harvesting kohlrabi from the greenhouses — lots and lots of kohlrabi. So tonight we made cream of kohlrabi soup, of course. It's like cream of broccoli, but much yummier...

 

 

Grab a large stock pot and melt a couple tablespoons of butter (avocado oil is a great substitute). Toss in a chopped onion and cook for about ten minutes, stirring occasionally, until the onions are soft. Then throw in a pound of diced kohlrabi; stir it well and cook for another couple minutes. Pour in 2.5 cups of vegetable stock and 2.5 cups of almond milk and toss in a bay leaf. Bring the whole thing to a boil and then simmer, covered, for about 25 minutes.

 

Pull out the bay and add 1/4 cup of uncooked orzo pasta. Season with salt and pepper and cook for another ten minutes. Puree the whole thing in a blender and garnish with something pretty. Tonight we used pea shoots from the #4 greenhouse. Enjoy!
